Chicken Soup.

My mom gave me a chicken carcass the other day and I made my own broth from it.  In my opinion, its so much better than canned broth but I have nothing against it and use it myself when I don’t have my own.  I’m also unsure why I always make HOT meals on HOT days.  The last 80 degree day I made calzones in a 400 degree oven and this 80 degree day, I made a big pot of Chicken Soup.  Maybe during the next snow fall, I’ll put together a large garden salad and then I’ll really have something pretty sweet going on here at 1046!

Calzones on a HOT Day!

What was I thinking?  It was the perfect opportunity for grilled salmon or the perfect night to grill my cilantro/lime chicken and serve corn & bean salad with it.  Heck, really, it was the PERFECT night for a big salad!  Topped with grilled steak, chicken, or fish…. I made Calzones.  in a 425 degree oven.  with no air conditioning.  Where was my head?  Poor Brian wasn’t even greeted with a sweet ‘hello’ or a kiss when he arrived home.  I looked at him with a sweaty face and mascara running down my eyes and that was all he needed to make the decision to head to the AC FIRST and turn. it. ON!  (In March)  Even the boys side burns were wet.  It was hot! Hot! HOT!  I primped myself, then properly greeted my hard working man and we sat down to dinner.  These calzones turned out great!  For the dipping sauce, I used a small container of my homemade pasta sauce… Oh, the joys are freezing sauce!

Cook’n Recipe Organizer

BREAKING NEWS!  My recipes are finally organized!  (Well… Getting there!)  I’m SO EXCITED to share this amazing tool with you.  Its one I personally feel every mama needs!  When introduced to Cook’n a few weeks ago, I was beyond impressed.  You know that I love to cook and bake!  You also know that I love organization.  But when it comes to my recipes, they were stored everywhere ~ In a wicker basket (poorly alphabetized), saved in my e-mail (under recipes), hand written (on sticky notes in my kitchen drawer), stuck inside cookbooks (with food stains on them), saved under ‘Recipes’ in my iPhone.  It was ridiculous and I needed a solution!  This software program has changed this area of my life and I’m so happy to have been given the opportunity to share it with you!

Mama’s Meatloaf & A Sweet Treat too!

Over the years, I’ve compiled many meatloaf recipes and this week, I decided to put a handful of them in front of me while I prepared our MEATLOAF DINNER.  It turned out delicious!  The meatloaf was moist and melted in our mouths and side dishes were perfect in my opinion (I’m not one for mashed potatoes)!  Now if only I measured every ingredient before putting it together… Sorry! Stick with me and my terminology and I guarantee you’ll love this Meatloaf recipe!

Crockpot Beef Stroganoff

When I have a busy day ahead, I like to prepare dinner in my crock-pot.  This meal is one of our winter-time favorites and come late afternoon, our house smells incredible! My dinner guests loved my Beef Stroganoff served with a side salad and there’s none left to show!  I’m kicking myself this morning because I forgot to take a picture.  However, I found one that looks similar to the one I made!  The coloring of the sauce looks the same but had I taken a picture of mine, you would have seen a lot more mushrooms.

Chicken Enchiladas

Sorry you haven’t heard from me in a few days.  My PiggyToes have been running around (literally) preparing for the Willow House Party that I’m hosting this evening.  I also had all intentions on putting together a recipe post with the appetizers I made, but by the end of the night, I didn’t want to think, smell or look at food.  Look for a party post though – I have some yummy & easy apps for you!  + the fabulous Sangria recipe that you must make for your next get together!  Anyway, after all of the prep I did, I threw together Chicken Enchiladas for our fam last night.  They are definitely worthy of posting and would make a great Friday night dinner- The boys loved them!
