Chicken Soup.

My mom gave me a chicken carcass the other day and I made my own broth from it.  In my opinion, its so much better than canned broth but I have nothing against it and use it myself when I don’t have my own.  I’m also unsure why I always make HOT meals on HOT days.  The last 80 degree day I made calzones in a 400 degree oven and this 80 degree day, I made a big pot of Chicken Soup.  Maybe during the next snow fall, I’ll put together a large garden salad and then I’ll really have something pretty sweet going on here at 1046!

Calzones on a HOT Day!

What was I thinking?  It was the perfect opportunity for grilled salmon or the perfect night to grill my cilantro/lime chicken and serve corn & bean salad with it.  Heck, really, it was the PERFECT night for a big salad!  Topped with grilled steak, chicken, or fish…. I made Calzones.  in a 425 degree oven.  with no air conditioning.  Where was my head?  Poor Brian wasn’t even greeted with a sweet ‘hello’ or a kiss when he arrived home.  I looked at him with a sweaty face and mascara running down my eyes and that was all he needed to make the decision to head to the AC FIRST and turn. it. ON!  (In March)  Even the boys side burns were wet.  It was hot! Hot! HOT!  I primped myself, then properly greeted my hard working man and we sat down to dinner.  These calzones turned out great!  For the dipping sauce, I used a small container of my homemade pasta sauce… Oh, the joys are freezing sauce!

Chicken Enchiladas

Sorry you haven’t heard from me in a few days.  My PiggyToes have been running around (literally) preparing for the Willow House Party that I’m hosting this evening.  I also had all intentions on putting together a recipe post with the appetizers I made, but by the end of the night, I didn’t want to think, smell or look at food.  Look for a party post though – I have some yummy & easy apps for you!  + the fabulous Sangria recipe that you must make for your next get together!  Anyway, after all of the prep I did, I threw together Chicken Enchiladas for our fam last night.  They are definitely worthy of posting and would make a great Friday night dinner- The boys loved them!

Chicken Wings – YUM.

In my opinion, there is nothing better than Chicken Wings, Blue Cheese Dressing and Fresh Cold Celery Sticks!  I crave wings and usually always have a package in my freezer.  The boys love them, not to mention I’d much rather them have a little protein than the Goldfish Crackers on the top shelf of our pantry.  A perfect pre-dinner snack!  Try it: This, my dearies, is…

Easy Crockpot Meal: Italian Chicken and Vegetables

I’ve been so busy lately; I feel like I haven’t stopped!  We’ve had a few play-dates, I met a dear friend for coffee, Rocco’s had his pre-school Christmas party, I’ve had a few evening Holiday Parties… Its all been really fun but definitely wearing on me by the end of the week with a hubby who is busy at work and 2 little ones running circles around me – Its a busy time of year for all!  The easiest way for me to get a healthy & delicious dinner on the table this time of year is to pull out my CROCK-POT!  It takes the last of my energy to put it all together at the end of the day, but then all I have to do is take it out of the refrigerator the next morning and turn it ON!

By 5:30pm – Dinner is ready!  Here is a delicious and healthy crockpot meal for you! Love, Me

Chicken Divan Casserole

OK! OK!  So, I know I just posted a recipe where I talked about wanting to cook healthier meals this fall/winter but Brian LOVES this comfort meal as do BOTH of the boys!  I’ll cook it as ‘light’ as I can and watch my portion size.  If you don’t care about any of that, all power to ya: Get the real deal for the soup and mayo and add more cheese!  Just don’t ever say I recommended that 😉  This meal is SO good and a keeper in my Casserole Recipes!
