Chicken Soup.

My mom gave me a chicken carcass the other day and I made my own broth from it.  In my opinion, its so much better than canned broth but I have nothing against it and use it myself when I don’t have my own.  I’m also unsure why I always make HOT meals on HOT days.  The last 80 degree day I made calzones in a 400 degree oven and this 80 degree day, I made a big pot of Chicken Soup.  Maybe during the next snow fall, I’ll put together a large garden salad and then I’ll really have something pretty sweet going on here at 1046!

A jam packed Weekend!

Our weekend consisted of a hodge-podge of FUN.  Brian and I had an AMAZING date on Friday night.  We went into town and had sushi at Nakama.  I love it there.  As a stay at home mom, when we go out, I really have no desire to sit in a quiet or stuffy restaurant for date-night.  I want loud, fun, tons of people, great food… you get the idea!  Nakama is just that, not to mention, you’re bound to see ‘someone cool’ too – In our case, Pouncy from the Pittsburgh Steelers.  We ordered the ‘Nakama Sushi Platter’ and there were at least 40 pieces of sushi on it.  Brian’s fav was the salmon and mine was probably the crab ~ mmmm.  I love that my husband loves sushi because its by far my favorite food! It was such a beautiful night to walk the streets after dinner.  We chatted, stopped into the ‘S Bar’ and had a cocktail, looked at desserts & chocolates through the window of a cute little store (& didn’t stop because we were beyond stuffed) ~ It was just great.  The whole night.  I love being married to Brian.  and I love that its still so much fun to flirt with him too ; )

Calzones on a HOT Day!

What was I thinking?  It was the perfect opportunity for grilled salmon or the perfect night to grill my cilantro/lime chicken and serve corn & bean salad with it.  Heck, really, it was the PERFECT night for a big salad!  Topped with grilled steak, chicken, or fish…. I made Calzones.  in a 425 degree oven.  with no air conditioning.  Where was my head?  Poor Brian wasn’t even greeted with a sweet ‘hello’ or a kiss when he arrived home.  I looked at him with a sweaty face and mascara running down my eyes and that was all he needed to make the decision to head to the AC FIRST and turn. it. ON!  (In March)  Even the boys side burns were wet.  It was hot! Hot! HOT!  I primped myself, then properly greeted my hard working man and we sat down to dinner.  These calzones turned out great!  For the dipping sauce, I used a small container of my homemade pasta sauce… Oh, the joys are freezing sauce!

What I loved about our weekend…

We started our weekend just right.  The boys went to bed right around 7:30/8:00 on Friday night and my Bri and I spent the night on the couch listening to music and talking.  I love those nights when we’re able to catch up with each other; especially after a long week.  And I’m always amazed at how I continue to learn new things about my husband.  Its been, goodness, almost 12 years since we’ve met? or is it 13?  I can’t remember right now.  Even though I know him like the back of my hand, I love when I learn something new!  Usually on nights like those, I always learn something new ; )  Not to mention, I love dreaming with him.  Hearing his dreams make me smile and sharing my dreams with him make them feel real.  Before we knew it, hours had passed and our eyes were tired.  I was able to catch up on the sleep I lost during the horrific thunder storm the night before.

I woke Saturday morning feeling refreshed and ready to start building our 1st garden!  Rocco was a big help using the level and getting supplies and Brian turned into Mr. Handyman and got this frame up faster than I could have offered & poured him a glass of water!  I bought Organic Seeds for when its time to plant and hopefully this year, we will grow: Green Beans, Onions, Summer Squash, Eggplant, Cucumber, Beets, Tomato and Garlic this year!  Don’t even ask me if I’m for real – I’m still dreaming and believing this can be done!  What is for sure is that I will grow 4 herbs on our deck that I’ve always grown and cooked with: Basil, Oregano, Thyme, Cilantro

Whats Up.

These pictures are pretty much the only pictures I took during ‘that month’.  When I look at them, its a reminder of some really emotional days I had then I shake my head and look longer.  When I look longer, I am reminded that these were some of the sweetest days I’ve spent at home with my family to date.  (And yes, I WILL find something sweet about our stupid animal that is getting into our garbage cans night after night.)  Staying home for 1 month proved to me that we don’t have to leave home to make memories (of any kind) with our kids.  These photos are also a reminder to me that no matter whats going on in our lives (whether happy or sad), I can always find a sweet little story about the pictures I take around 1046.  I love that about my life – even on my darkest days, my little guys (& big one too) bring such joy to my life. Yes, I know.

I realize I haven’t posted in a while.  A LONG while.  Its been bittersweet but I sure do miss you and miss chit-chatting with all of you!  HOW ARE YOU?  I’ve been doing the usual: Spending lots of time with our little family of 4, focusing on getting healthy & well again, keeping up with house and home, cooking, cooking, baking, cooking… and of course, shopping for good deals too!  If you follow me on FB, did you see the Kate Spade Sheets I found at TJMaxx?  Gosh, I love that store!  And I washed them in Lavender… holy moly!  Its a good thing I have 2 toddlers or I’m not sure how I’d get out of bed in the morning! You need to check your local store for them!

I love the little e-mails and questions I’ve been receiving too!  Its sweet to know you care about my thoughts and opinions!  Flattering to say the least!  My latest question was about what to put in a toddlers Easter Basket.  Share your thoughts if you have any good ideas!  Maybe I’ll post on that soon…  Though I haven’t turned the ‘answer’ to your questions into blog posts – I did reply and I’m proud of that! haha  ANYWAY, this weekend is Rocco’s 4th birthday weekend!  FOUR!!!  I can’t believe it- our 1st born.  I attempted to create and bake a Pirate Ship Cake for him (his 1 and only birthday request)!  Oh wait, and a “huge squirt gun”…  The cake turned out pretty good!  Wanna see?  Find ‘Where The Piggy Toes Go’ on Facebook and check it out 😉  I’m off to clean up kitchen & home and get ready for our families to celebrate Rocco today!  Thanks for sticking around with me and checking our page for updates!  I’m still here and alive & I promise to share the fun we’ve been having SOON!  Hope you all are doing well!  Miss you lots!
