Chicken Soup.

My mom gave me a chicken carcass the other day and I made my own broth from it.  In my opinion, its so much better than canned broth but I have nothing against it and use it myself when I don’t have my own.  I’m also unsure why I always make HOT meals on HOT days.  The last 80 degree day I made calzones in a 400 degree oven and this 80 degree day, I made a big pot of Chicken Soup.  Maybe during the next snow fall, I’ll put together a large garden salad and then I’ll really have something pretty sweet going on here at 1046!

Italian Sausage Crock-Pot Soup

We had a ton of fun around the house this morning!  I had planned to check a few things off of my ‘TO DO’ list, but some times those plans just need to wait.  It was so beautiful; our PiggyToes had to run around outside!  As it got nearer to lunch-time, we decided to grab our Toy Story blanket and have lunch on the grass! and YES my friends, those are All-Natural Chicken Nuggets! 😉 Read the rest of this entry

Simple, Satisfying & Packed with Flavor! Its a SOUP day…

This soup will forever be a staple in our home! I can HEAR the piggy toes running to the dinner table…

Ingredients:

1 pound Italian Sausage (Note: I’ve used light ground turkey sausage)

2 cups onion, chopped

1 cup carrot, diced

2 cups button mushrooms, sliced

2 T. garlic, minced

4 cups Chicken Broth

1 14.5 can Chopped Italian-style stewed tomatoes (Note: You can use diced tomatoes and/or fresh tomatoes as well)

1 cup Mafalda Pasta (Note: I’ve also used Campenelle Pasta when I can’t find Mafalda)

2 cups fresh spinach chopped

1 cup fresh mozzarella, diced/cubed

1/4 cup Parmesan cheese

4 tsp. sliced basil leaves

Directions:

1. Brown Sausage in a large saucepan over medium-high heat.

2. Add onion & carrot, saute 3 minutes.

3. Stir in mushrooms & garlic & saute another 3-4 minutes

4. Add Broth & Tomatoes, bring to a boil.

5. Stir in the pasta and simmer until cooked about 10 min. (or according to package directions)

6. Add the Spinach & cook until wilted

7. Serve over mozzarella cheese then garnish with Parmesan & basil

*FYI- I’ve ‘tweaked’ this recipe many times.  I’ve doubled the recipe all together, another time I added more carrots & spinach, once I doubled/tripled all the veggies and omitted the sausage.  I also season it with all of my Italian Seasonings (Basil, Oregano, Marjoram, Sage, etc.) TRY IT LIKE THIS FIRST then tweak it to your liking! Enjoy 😉
